Dom Perignon Dom Perignon champagne is produced only as a vintage, and only when climatic conditions favour the ideal balance of sugar and acidity in the grapes.
Dom Perignon is made exclusively from white Chardonnay and black Pinot Noir grapes, the two noblest grapes of the region. Together they produce wines that have the ability to age with grace and style. The Dom Perignon brand is named after the 17th century Benedictine monk and winemaker, Dom Pierre Perignon. He is credited with being the first person to master natural effervescence which is so crucial to champagne. Dom Perignon is released only as a vintage wine, and is left to age in the cellars for a minimum of seven or eight years.
Many releases of Dom Perignon champagne can be enjoyed 15 to 20 years after harvest, with some lasting much longer. Typically, Dom Perignon champagne is released in only three or four vintages every decade.
